Recipe: Mashed Cauliflower with Rosemary & Garlic

I strongly dislike the ubiquitous cauliflower florets on store-prepared vegetable trays so I was happily surprised to find a cauliflower recipe that I like!

My husband and I have been trying to add more veggies to our diet and this rosemary garlic mashed cauliflower is an easy and delicious way to do so.

First, I cleaned and chopped the cauliflower.

I steamed the cauliflower in a medium saucepan, covered over medium heat.

While the cauliflower was steaming, I pressed one large clove of garlic and chopped a small spring of rosemary. When the cauliflower was soft I added some fresh ground pepper.

I put the cauliflower, garlic, and rosemary into a food processor. I mixed in about 1/8 cup buttermilk to thin the mash a bit.*  The final consistency was similar to smooth mashed potatoes.

That’s it. Enjoy!

I used powdered buttermilk reconstituted with water, but fresh buttermilk would also work.
