Recipe: Breaded Chicken with Honey Mustard Sauce and Prosciutto

I adapted this recipe from one of Jaime’s favorite appetizer recipes, sesame chicken with honey dip.  This modified recipe makes for a relatively quick dinner for one.

Breaded Chicken with Honey Mustard Sauce and Prosciutto

To make one serving of breaded chicken with honey mustard mayonnaise sauce and prosciutto, I used:

  • 1 poached chicken breast
  • 1 slice of prosciutto
  • 2 Tablespoons mayonnaise
  • 1/4 teaspoon dry mustard
  • 2 Tablespoons bread crumbs
  • 3/4 teaspoon minced onion
  • 1 1/2 teaspoons honey
  • 3/4 teaspoon Dijon mustard
  • Salt and pepper to taste

From Jaime’s original recipe, I omitted the sesame seeds and added prosciutto.  I also scaled down the recipe, decreased the mayonnaise a bit, and kept the piece of chicken whole, rather than cutting it into bite size pieces.

First, I mixed the mayonnaise, dry mustard, and onion.  I coated the poached chicken breast with the mayonnaise mixture and rolled the chicken in the bread crumbs.  I placed the chicken on a baking sheet and baked for about 10 minutes, until lightly browned.

While the chicken was cooking I mixed the remaining mayonnaise with the honey and Dijon mustard.I served the chicken on a slice of prosciutto with the honey mustard mayonnaise as a dipping sauce.
