I’m still not sure what Jaime and I will be doing for the New Year, but I thought I’d share a couple of recipes that I think would make good desserts for a New Year’s Eve party. These desserts are pretty and festive and easy to make. First up: mini cherry pies.
Unlike regular sized pies, these cute mini pies are a finger food so they are good for receptions and parties.
To make these mini cherry pies, I used the following:
1 can cherry pie filling
2 packages refrigerated pie crusts (the unroll and bake kind)
Yup, that’s it two ingredients.
I preheated the convection oven to 350 degrees Fahrenheit (or 375 in a regular oven). I greased a mini muffin pan with vegetable shortening.
I unrolled the pie crusts on a piece of parchment paper. I cut two sheets of pie crusts into 24 rounds using a round cookie cutter about an inch larger than the pan openings. I lightly pressed one round of dough into each muffin cup. I spooned 3 cherries and about 1 tablespoon of the glaze into each dough lined muffin cup.
I baked the mini pies for about 10 minutes. At this point the pies were browning quite a bit so I covered the pies with aluminum foil and cooked for about another 5 minutes.
I let the pies cool slightly and then while the pies were still warm, I removed them from the pans and let cool completely on a wire rack.
