“Chrysanthemum” Cupcake Decorations

I am still on a quest to find the perfect vanilla cupcake recipe, but in the meantime I thought I’d share this super easy and beautiful cupcake topping.  I’ll share the the recipe for the accompanying sugar cookies next week.

  • 12 cupcakes
  • 1 batch frosting (I used half of this to frost the cupcakes and the other half to frost the leaf sugar cookies):
  • 1 cup butter
  • 3 cups powdered sugar
  • 1.5 teaspoons vanilla
  • 2 tablespoons whipping cream (milk also works)
  • Food coloring (optional)
  • About ½ bag small marshmallows
  • Pink sprinkles
  • Leaf cookies

I cut the mini marshmallows in half diagonally.

I mixed the mini marshmallows with the sprinkles working in small batches.  When needed I dipped the marshmallow halves in the sprinkles individually to make sure that they were well coated.

I frosted the cupcakes.  Starting on the outer edge of a cupcake, working in concentric circles, and moving toward the center of the cupcake, I stuck the marshmallow halves (with the cut side up) in the frosting.

I served the cupcakes on a platter with the leaf cookies.
