This chicken and sausage paella is a great dish.  My mother taught me how to make this.

Chicken & Sausage Paella

It is a little more time intensive than my usual weeknight dinners, but it certainly takes less time than cooking three of my usual dinners! This recipe makes enough for three dinners for my husband and me.  I like to make this paella Sunday evening and then have the leftovers for dinner on Monday and Tuesday. I even think that it tastes better after the first day!

Recipe: Baked Halibut with Cheese Sauce and Wilted Arugula

This has been one of my family’s favorite recipes for years.  We usually have halibut with cheese sauce on a bed of wilted spinach, but since we had some arugula in the fridge that was nearing its expiration date I used arugula in place of the spinach.  For this recipe, I prefer spinach, which has a mellower taste than arugula.

Chilled Cucumber and Zucchini Soup (Recipe)

This cucumber and zucchini soup makes a great summer appetizer or even a main course.  I like it best chilled, but it can also be served warm.  Jaime and I made this soup for our summer party and served it in parfait glasses with a Sun Chip, sour cream, and dill garnish.  The chips and sour cream add a nice salty crunchiness and creaminess to the soup respectively.
