Blueberry Buttermilk Scones (Recipe)

These scones make a lovely breakfast.  The outsides have a nice crunch and the insides are soft and fluffy.

Blueberry SconesI like them best with frozen blueberries, but they are also nice plain or with dried fruit or chocolate chips.

Blueberry SconesTo make 12 scones, I used the following:

  • 3 cups all-purpose flour
  • 2 Tablespoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup melted butter
  • 1 1/4 cups low fat buttermilk
  • 1/2 cup frozen blueberries

I preheated the oven to 425 degrees Fahrenheit.  I lined a baking sheet with parchment paper. In a large bowl I stirred together the dry ingredients. I added the liquid ingredients and stirred until a soft dough formed. I folded in the frozen blueberries. I spooned the dough into mounds on the baking sheet.
